Everybody knows pancakes are my favourite food. It is so hard for me to say NO to them. And I am not obsessed with food. I am just obsessed with pancakes.
The three of us (mom, dad, son), we just don’t indulge in sweets a lot. They make our energy to decrease drastically after an hour of consuming sugar, so we don’t get to be really productive. We avoid it in the best way possible. But I crave sugar, and my guys crave sugar also. And we made our rules. We eat those fuel sugar stuff to keep up the good energy at a high level and to keep the stress away. Our brain needs glucose so it can function properly and make us happy. Why buckwheat?
Buckwheat flour is high in fibre, antioxidants, and protein. You can leave out meat sometimes and make some alternative with buckwheat instead, and you will still feel full. It also contains vitamins (thiamine, niacin, vitamin B6) and minerals (manganese, magnesium, phosphorus, copper, iron) and is non-allergenic and gluten-free. Those who have problems with blood pressure and high cholesterol should consume it more often due to the high content of fibre.
You can cook buckwheat (1 cup buckwheat, 3 cups water) and you can make porridge of it, just like you do with oats! There is also a great healthy alternative to pasta, but let’s get back to the recipe my family is in love with!
These pancakes are for everything. Breakfast them with eggs, cheese, bacon, salads. Eat them with peanut butter and bananas as a morning after workout snack. Or try an early dinner filling them with melted dark chocolate and fruit. And they are so healthy, so delicious, and very easy to make!
The easiest buckwheat pancakes
Ingredients
- 150 g buckwheat flour
- 1 egg
- 1 cup milk (any kind)
- 2 tbsp butter
- 2 tsp baking powder
