I really needed to cook this easy lunch today.
The weather is so hot and dull that I feel my bones panic inside me. My lemonade goes everywhere I go and air-conditioner became my best friend. Which is so boring and I am so sleepy! I knew my child would be hungry after his nap. And this goes for my husband too. And me. Eating light is the best option during these hellish days. It will hydrate your body and give you more energy to stand against tiredness.
Why should you eat more greens?
Green vegetables contain iron and vitamin C. Vitamin C is a powerful antioxidant which provides you healthy and glowing skin and keeps your body safe from viruses. Iron is a mineral that supplies vital organs with oxygen. Our bodies are not able to produce iron on their own, so it is very important to take it from food. Lets do something good for our health today. Get ready to cook with me!
What’s so great about this lunch is that it is D-E-L-I-C-I-O-U-S! And you will not be hungry because it has protein too.
Put on your cook uniform now. This will take some time. Not much, but I recommend that you make yourself comfortable with cooking. You know how they say: The only place you need to live forever is your body. And you are the only person alive that can take care of your own. So, fill it with goods!
Baked rice with green vegetables and eggs
Ingredients
- 300 g rice
- 100 ml sour cream
- 6 slices cheese
- parmesan
- olive oil
- salt
- 8 slices frozen mangel
- 6 eggs
- bacon
- coconut oil
Instructions

Preheat oven to 180C.

Cook rice.

Oil the baking pot and fill it with cooked rice.

Put the cheese slices all over rice. Then pour in sour cream, parmesan and salt if you want to.

Now line those mangel slices (you can use any other green veggies also).

Bake for 15 minutes.

Meanwhile, fry eggs and bacon on coconut oil.

Serve all together.
